Green Beans with Sesame Dressing
Put sesame seeds in a small skillet over medium heat. Stir and toss frequently until they’re toasted (a few shades darker). Transfer to a bowl to cool.1. Bring a pot of water to a boil and season with salt. Add the green beans and cook ~3 minutes. They should be fully cooked, but still have a slight crunch. Drain and quickly rinse in cold water to stop them from cooking further.
Pound sesame seeds in a mortar. Add sesame seed powder, soy sauce, and sugar to a medium mixing bowl and mix until combined. Add green beans and stir to coat them well.
If you don’t have a mortar, you can also buzz sesame seeds in a spice grinder until you have a coarse powder.
This recipe is inspired by a classic Japanese salad, called Gomaae.
Serve alongside rice, protein, and soup for a balanced, Japanese-inspired meal.
