Preheat the oven to 375℉.
Spray an 8x8” or 9x9” baking dish with cooking spray and set aside.
In a large bowl, mash a ripe banana with a fork. Add the rest of the ingredients to the bowl and mix until combined.
Pour oat mixture into prepared baking dish. Bake for 30-35 minutes or until center is set. Let sit for 10 minutes before serving.
This recipe is great for meal prepping. Slice baked oatmeal into 6 pieces and refrigerate. It can be heated up in the microwave and used as a quick, filling breakfast.
Try topping with Greek yogurt or your favorite nuts (almonds and walnuts work nicely).
